Why wait for the good stuff? We’re getting right into the recipe because we know you don’t have time to waste. Mix it up a little and add a teaspoon of vanilla extract in with the wet ingredients.   1. Combine your wet ingredients. This includes the pumpkin puree, oil, egg, and milk in a large bowl.

  2. Grab a medium bowl, and mix the allspice, a teaspoon ground cinnamon, baking powder, flour, a teaspoon baking soda, 1½ teaspoon salt, and a teaspoon ground ginger. 

  3. Stir just enough of your pumpkin mixture into your dry ingredients for your pancake batter to combine.

  4. Lightly oil a Hexclad pan with butter or cooking spray over medium-low heat.

  5. Pour 1.5 oz of your batter into the pan to start cooking your first pancake. Wait for the edges to begin bubbling, then flip your pancake. Cook both sides until they’re golden brown. 

  6. Serve with the toppings of your choice (we’re partial to powdered sugar, a drizzle of melted butter, whipped cream, or maple syrup) and eat up.
